They spell it out for you. They're using a heavy sedative, so they can't just wake up from the city dream into reality. Leaving the city dream means getting dropped into limbo where time dillation will drive you insane. When the mission finishes they basically spend a couple weeks in the city until the sedative runs out and they wake up.

Actually they literally spell it out for you that sedative doesn't impact your inner ear meaning you could always wake up using kick/falling method. Getting shot would drop you into limbo. What you are suggesting that kick/falling could only wake you from dream within dream to first dream level until you have to wait until dream machine runs out. It would somehow make sense but movie never says anything about that.

No they couldn't, a kick only works if done from the level above yours. So in the city dream someone in the airplane would need to kick them awake. If they just jumped on their own without also being thrown on the level above them they'd just kill themselves and end up on limbo. It's why they synchronize the kicks.

This is shooting myself in the foot but I've done it and it's a nightmare. I kept waking up over and over again and every time I got more and more worried I would never wake up for real.

You need to "ride" (using the character's expression) the kick being given to you from above, which means experiencing falling in your level when someone above you throws you. If you don't fall in your level as well, you "miss" the kick. It's said in the snow level when Yusuf throws the van from the bridge, but the characters in the fortress aren't falling yet and say something to the effect of "oh shit we missed the kick"

So when the thunderstorm starts and Eames blows up the fortress, Ariadne jumps off the bridge to synchronize with her sleeping body falling among the debris, and her body being thrown in the elevator up to the bodies being jolted by the impact of the van in the river

If she hadn't jumped she'd have missed the kick and would have to stay until the thunderstorm destroyed everything and made her respawn in limbo (which is what happened to Cobb)
