The miniseries is definitely more accurate from a strictly literal and detail-perspective but the films far better portray the true sense of scale, awe and atmosphere of the book due to the vastly higher budget/resources and Villeneuve and co's artistic brilliance. Even when the movies aren't strictly faithful to the words of the book, I always got the feeling of "yes, this is how Dune FEELS" which is actually pretty damn rare for a modern-day adaptation.

Part One has a lot of missing stuff from the book, I cannot even comprend how is it possible that a 2.5 hours film can have so little but yes it was at least faithful.
Then it came Part Two which trashed everything that was being faithful from Part One.

I think they definitely did go a bit too far in making the female characters overly emotional, both Jessica and Chani. Jessica is MUCH better adapted, though. Aside from being a bit too outward in how she portrays her feelings, from time to time, she is otherwise portrayed really well and captures that fine balance between being a caring mother and being a cold, calculating scheming witch.
Chani...... yeah this was awful. Just fucking awful how they totally rewrote her character. I agree, there was absolutely no reason to make her be a mouthpiece to explain to the audiences why Paul is becoming a bit shady. It is very obvious in how he acts. The movie goes out of its way to show him in a more morally questionable light than the book does, with the hindsight of Messiah. I actually liked how the movies made Paul darker/more ruthless because it fits in better with the later books but Chani is just terrible.
I did laugh when I watched the movies with my parents and as soon as Paul said he'd marry Irulan, my dad said: "Hah, good, she's much better than that other girl!" (being Chani)

He's just too soft and passive. Paul in the book, even before becoming Lisain al-Gaib, was stern, serious and aristocratic. But Tim and the writers played him as the stereotypical reluctant hero bullshit who is meek and timid and soft.
