Filming in color was extremely expensive and time consuming over just black and white. So if a studio going to film technicolor they wanted their moneys worth. Why most technicolor films were musicals or period pieces. With big bright costumes and usually multiple costume changes, over the top colorful sets.

Technicolor is basically lost technology by this point. It required expensive cameras that were filming onto 3 separate strips of film simultaneously that probably haven't been manufactured for decades now

real technicolor also requires a ton of special lights. You can still do it, enough film stock does exist, but it would be absurdly expensive. I am sure if it was possible tarantino would have done it for Once Upon a Time
