Davos is brought before Stannis because he helped Edric Storm escape right when he and Melisandre were plotting to burn Edric. Stannis is very firmly in Melisandre's grasp because of the loss on the Blackwater (where he excluded her because he disliked rumours he was relying too much on her and her red god, and didn't want his kingship marred by such taint) and her trickery involving the leeches (burning kings' blood supposedly being the power behind Joffrey and Robb dying, rather than them being actively at war). Davos confesses and Stannis seems ready to sentence him to death, but Davos has been learning to read and presents his 'Paper Shield', the letter from Maester Aemon requesting aid at the Wall. Davos reminds Stannis that he is the rightful king, regardless of whether he is accepted as such, and the duty of the king is not to chase after the throne, the duty of the king is to protect the realm. Stannis reflects on this with gratitude, pardons Davos, and begins preparations to move North. Melisandre isn't even really part of the conversation.
The show
Davos helps Gendry escape while Stannis and Melisandre are plotting to burn him, Blackwater, leeches, etc. Davos confesses, and Stannis order him killed. Davos shows his Paper Shield, and Stannis shrugs and orders him killed. Melisandre says wait and throws the paper into the fire, then she says, "No we must go north the fire says so," and Stannis laughs and orders Davos killed. Then Melisandre says, "No, we need Davos alive," then Stannis laughs again and deeply considers ordering Davos killed then laughs some more and tells Davos, "Yuh 'ate da red god? Well u're in 'is army now," and laughs again.
This moment perfectly encapsulates how badly D&D hated the character. Stannis was not butchered by clumsy oafs, he was assassinated by hateful homosexuals.
He's not explicitly gay in the books (as in we never see him with Loras' cock in his mouth like in the show), but to say he isn't canonically gay is also untrue, it's very heavily hinted at and alluded to. I'll take Stannis' word on the matter

I am not Robert. But we will march, and we will free Winterfell … or die in the attempt."
Followed by his own southern lords shaking their hands and giving up in fear, but the northern lords shout out cheers, and even Asha, who is a PoW of Stannis', is impressed by how relentless and bold he is.
Absolutely fucking legendary moment that shows why even people that hate and fear Stannis genuinely respect him.

The show-writers (well, D&D specifically) had a really bad case of favouritism and they let their personal biases for characters severely affect how they wrote things. If you were a character they personally liked (Tyrion, Arya) they'd bend over backwards to remove any slightly negative or troubling element in their stories, whereas if they disliked you (Stannis, Jaime) they'd go out of their way to make them seem extra villanous or stupid. Very bad-faith writing. They shouldn't have been let within 10 miles of the source material.

He later suppressed the Greyjoy Rebellion, against a famously ruthless warrior-culture, against leading from the front-lines. The guy was true steel. Just because he was mediocre at ruling the kingdom (actually debatable since aside from the Greyjoy Rebellion his reign was peaceful and stable) doesn't mean wasn't strong and fearsome.

And his accomplishments in books 3-5 are genuinely impressive - he defeats the single largest army in known history at the battle beyond the Wall, he basically destroys the entire wilding threat, and then he begins a campaign of liberation/reconquest through the vast North, in totally foreign and and hostile territory, and keeps pushing on despite brutal conditions. There's a reason why even Asha was impressed by him despite hating his guts.

Renly had some short-term politcal effectiveness, yes, but he was never truly tested and tried like his brothers were. Both Robert and Stannis went through very difficult and terrifying trials and came out the other side strong and scarred but successful. Renly was basically a kid and died before he did anything of note. He only had success because of his royal status allowing him to make alliances easily. Robert and Stannis had genuinely impressive accomplishments regardless of their royal status, they were PERSONALLY impressive and tough.

Jaime's Feast for Crows storyline is literally my favourite storyline in the entire series by far and I was absolutely devastated when the show butchered it. It was so great it could have been its own novel in its own right, and the show sidelined it to a few scenes filled with lame comic relief and retarded, non-sensical bullshit.

He then won the Greyjoy war, and who won the navy part of the war? The part the warrior martial culture was expert at? Yes, it was Stannis. By the time they landed on the islands the war was over.
Stannis is the real deal, Robert is copper who protected by Jon Arryn and Renly was the iron who was broken before he bent. He didn't back down on himself and rushed ahead of his main army to challenge Stannis in honorable battle with his horse. If he just stayed behind and let his commanders deal with him he wouldn't have been killed by magic.
