You get that reveal very quickly, that the knight always loved her and always tried to show that he loved her to her, despite her being oblivious to his feelings and behavior.
What is expanded throughout the anime is the elf reminiscing about the past and realizing that certain actions that the knight took in the past, that she paid little mind to, actually were grand gestures of love, and how that realization hits her hard now, making her actually fall in love with the knight that is now long dead.
Every moment she learns something new about him, now knowing that he loved her, makes her fall harder for him. But he is long gone.
I thought this was a very neat take on a long lived being love life.

The demons are pretending to be normal people, faking emotions and playing the victim card, which is working with humanity, because the war between humanity and the demon race happened decades ago. So the demons are trying to frame the war as one of aggression from the humans, making it be seen as if humanity was in the wrong.
The protagonist, though, knows that the demons have no emotion and are just preying on humanity's naivety and good intentions. She remembers very well all the atrocities the demons committed.
A narrative involving a race that's ontologically evil and can never be redeemed is actually pretty revolutionary and controversial idea in the Western world, regardless of if it's anime or something else.
