Other shows like Star trek tng, family matters, and Seinfeld were done on film and film has essentially an infinite resolution only really being limited to how fine the grain was. So they can go in and digitize those film negatives at as high as a resolution as makes sense.
You can't do the same with magnetic tape.
Though one interesting quirk with remastering tv shows that were filmed is in the special effects. Often times they can't or don't want to spend the time and money redoing them, so they briefly cut back to the original low resolution release. This was super noticeable on family matters with steves inventions.
