Not true at all. In Seattle he was constantly drinking fancy wines and sherrys. In Boston the Frasier character was away from Niles (whom he measured himself against in terms of intelligence and culture) so he had less inclination to not participate in the fun goings at the local bar. In Boston Frasier also had Lilith who he viewed as snootier than him and he liked to rub it in her face that he was more down to earth than she was by hanging out with the Cheers gang.
In Seattle the competition nature with Niles was back on and so was Lilith and Cheers.

He reflects on the way he treated the boys and realizes he also needed to be supportive sometimes. I think that's part of the beauty of Frasier: he and his dad clearly had a shit relationship up until he returned to Seattle, and by the end of the series they're closer than ever before.

His sons interests are very niche and sophisticated. Not too many working class cops want to go to the ballet. The issue is that Frasier hung out in a working class bar in Boston but for some reason didn't want to do that in Seattle with Martin. Niles would never hang out in a working class bar, so he's not at fault. But Frasier made it seem like he was above Martin when in reality a few years earlier he was in Cheers frequently.

My headcanon for why Frasier was more down to earth in Cheers was that Niles brought out all his worst tendencies. Niles was probably also less neurotic before Frasier and Daphne moved to town.
The entire episode is just them trying to outsnob them and then Picard decides he's lost it and Fraiser is just too stubborn to admit defeat. He takes some shore leave and Fraise goes to Ten Forward and has a chat with Gainan who pours him a Bordeaux vintage and Fraiser says its the best wine he's ever had asks what it is.
