It wouldn't make for an interesting story. A TES game is one major plot yes, but that usually takes the backseat to a hundred side-quests.
If you want watchable Elder Scrolls media, it would have to be a TV show, and not about some chosen one avatar of god or something, it'd be about some eccentric like Jiub.
Get some mods to make the world a little fuller (roads, hills and mountains). The first dungeon is rough but if you make it out of that you'll be good.
In some of the dungeons it helps to have the console commands just because they can get so insanely long or you ahould figure out some sort of warp spell. Nights can be spooky, even in towns. Don't fuck with the guards.
It has an extremely generic plot and setting and it's a wrpg which means that the protagonist is also a faceless nameless nothing. What would an adaptation be about, exactly?

I think an anthology series would best capture the feel of elder scrolls. just hour long, standalone stories set in the world following different characters. but like any video game adaptation, it would be slop no matter what.
Elder scrolls lore is cool and all, but only in its ideas. It has a butt fuck ton of ideas that could have been done a lot better. Like the Dwemer. They should have dominated EVERYBODY.

Probably no Daedric Artifacts. The fact there will be a voice and dialogue to the dragonborn, I don't trust a group like Amazon to not turn the Dragonborn into DA Veilguard 2.0. And then the civil war plot will be turned into Democrats vs Republicans despite it making no fucking sense.
I'd love to make a series about the Vicn mods. Vigilant alone could be three seasons, the last one taking you through the history of Tamriel and various key players in the entire continent. But Glenmoril is where it could become one of the top shows ever.
