the first scene in season one is about white walkers, they dragged that storyline for an entire season, if anything they should have been done with it in season 6, and raised the stakes with the children and the weirwoods, those are more interesting tropes

that is structure for feature film, whilst transferable to the television format in some regard it's still not 1:1. Whedon was working in the peak era of tv, I know people call the late 2000s to mid 2010s the golden era, but the structural rules were being written in the late 80s and 90s. Dos and don'ts of what worked on long long-format (television) were ironed out in real time. Serialisation became popular (without it you don't get Sopranos or The Wire or any of your favourite shows) and with that it meant that the resolution stage of the standard 3 act structure could never fully be achieved until you were certain the series would continue no more.
You're spot on about the impact of his dialogue though. It doesn't help that he directly worked for Marvel and they went on to dominate the blockbuster scene for an entire decade. People regurgitating "whedon-esque" dialogue is cringe. No one would try to do that with say Tarantino because they know they'd be called out. But for whatever reason Whedon's dialogue style became acceptable to replicate on a widespread level, which does mare the quality of a lot of media.

Honestly my fear when I had given a damn about the book series was that we were going to have a fairytale ending since you start to realize GRRM is false with his absence of plot armor, as the two most blatant, nakedly young adult pulp fantasy characters:

The bastard child with a heart of gold, stoic and cares about honor and friendship and is the true king of Westeros gets to survive being stabbed to death

The exotic but not too exotic white princess with a mastery of big terrifying monsters and who loves the innocent and hates slavery :( gets plot armor after plot armor

People could call it another jump-scare like the red wedding (metaphorical jump scare) but it'd have been a good punch to have Jon die proper with the stabbing or Daenerys die proper at some other moment before coming to Westeros.

I may hate wheedonism but the issue is really just that it was too successful more than anything. And I think when he started to do the MCU in 2012 that was 13 years if you count from Buffy, straight up 20 years if you count from the buffy movie most people (myself included) didn't know existed. So to him being cancelled it meant his style existed for 30 years, and was insufferably popular for 10 years (when he got cancelled, 13 years since he started doing MCU shit).
