Fast food is all very streamlined and automated, not as much back then but still somewhat. It would be like going to a factory that makes 2025 cars and asking for a 2024. They could do it but it would be a big disruption.
Most places now have pictures of the items on a touch screen for the illiterate cashier to use. If there's no picture of an egg on the screen then you're out of luck.

because most restaurants don't have the extra space and equipment for 2 different menus at once. most of the food is pre-prepared and then goes into a heating tray to keep warm. usually for breakfast they have the trays for the sausage patties and eggs. then that gets switched over to the different types of burgers and chicken for the rest of the day. you have to sacrifice 2 of those to keep eggs and sausage patties, and most people never try to order those past breakfast.
you could try to cook the ingredients to order, but there are cross contamination concerns as well as the space needed for the eggs (since they need to be cooked in a special steamer)

but generally the biggest reason is they need to make space for the specials they make more money on, like the mcrib or minecraft burgers or whatever.

Worked at McD's about a decade before this movie was made, which would put it squarely in the era this complaint was forming, and the store had 2 grills. Facing them, on the right was the Regular grill which was at 350F iirc, and the left was the Quarter grill at 375F. Breakfast was done on both but at 275 or so and they were turned up at about 10:25 so they'd be ready for lunch items at 10:30. At the time, it taking too long to cool the grills back down to a temp appropriate for eggs was the explanation for no breakfast after 10:30. Later, a third grill was added to the left of the Quarter grill for the McRib and it's associated sticky bullshit but even it would have had to be on temp at 10:30 and I want to say it was at 425 but all I really can remember is it was noticeably hotter over there. I do know we couldn't use the Quarter grill for them. It had to be the new one.
