Again, this is only true for Europe starting around the late 1400's (maybe a bit earlier or late, I forget). which is to say, that only reflects a small period in the history of the arts.
For the majority of the history of art, art and the role of artists was thought of like any other job.
The idea of the creative genius that paints these masterworks does not apply.

and the artist did his thing, and he had to obey the artistic conventions of his time, he had to know the tropes and artistic language, and he did because he was trained, because being an artist was a role, a job

And he had to know the specific colors used to represent people of high status, the colors used to represent people of low status, he had to know that high status people, regardless of how tall they actually were in real life, had to always be drawn higher than the other subjects.
And he did all that because again, he was trained from an early age to do so.

But even if you look at only that specific period in European art history, the same applies. Most masters probably had an interest in the arts and did art as kids, but then they spend their life in academies, or being taught by other artists. They went through the institutions.
So much of European art history starting in the 1400's is about how the institutions that made the *academy of arts" changes and evolves. How movements are born and die. How artists rise and fall and some challenge and go against the status quo of the academy during their particular time.

I do not use it to compose a full image but I do not see any real issue with that either. I have a specific shortcoming in accurately depicting shadows in realistic style when doing complex multi-subject drawings. AI saves my ass daily.

I don't know what point you're trying to prove? They were all apprentices to professional artists and they eventually all operated within the establishment of the arts. They weren't self taught and they weren't outside the mainstream of the arts, they weren't like "underground" artists.
