My head Canon is that Jedi prior to the Empire relied on lightsabers and the force. Once the empire took over, all bets were off and it was survival above all else. To me, it works because it signifies how the Jedi Order's adherence to tradition and their ancient ways finally caught up to them, and the remaining Jedi have to take matters into their own hands.
Grievous does exactly this to off Kit Fisto’s shitty OC padawan in like episode 4 of Clone Wars, and then never does it again.

Also in general, Jedi speed and reflexes more or less makes blasters useless...see Vader easily blocking them. Even lightsaber duels are really decided by who makes a mistake first as power level
