They said it in the original film during the death star attack briefing. Rebels loved the Jedi, believed in them and were inspired by them. It was a rebellion to restore the republic, and the Jedi were it's guardians of peace and justice, who were all unjustly murdered.

Force religions are common in the setting and have existed beyond the Jedi since the beginning. "May the Force be with you" is the equivalent of "God be with you". Also it's pretty clear that within the Rebellion, the Jedi are mythologized.
