Because nothing much happens in that book. There are like two events, the rest is people talking. It's not a problem since the book is short, but if it's dragged out to 8-10 episodes and nothing is added it's gonna be dull as fuck.

Wut? The crew has essentially discovered that Murderbot has gone rogue, Murderbot killed a giant space worm, and the other surveying crew on the planet has been mysteriously killed. How is that nothing?

It's not nothing, it's nothing of note. It's nothing of note because it hasn't had any significant impact on the plot. The crew act's exactly the same, despite suspecting, The space worm attack had no lasting effect on anyone, and the other crew being dead is something that was a last minute cliffhanger. So like in the first five minurtes of the first episode it's just a robot that has hacked it's own security protocols and done nothing with it's new found freedom...other than download tv shows. Nothing that's happened has significantly altered the coarse of plot events.Hence it is all build up. There's no revelation of company conspiracy or alien plot, the crew isn't even sure the robot is malfunctioning they just suspect, the robot that named itself MURDERBOT hasn't murdered a single person. Up until now, I could have come in on episode 3 watched the recap and not missed anything I felt like I NEEDED to see to understand what's happened so far. Or missed any event that I felt like would be particularly informative or entertaining.

Nothing of NOTE has happened.

I think it's because they're mostly book adaptions and nothing happens for 2/3s of a book either. Then, when a single book in a series is split up between two 10 episode seasons, it's going to feel like like it drags a bit to some people.
